Sweet Potato Pie

This cold latte blends sweet potato purée, oat milk, and Cape Coast’s bold 'El Jeffe' canned coffee for a smooth, spiced taste of fall. With hints of maple and cinnamon, plus a marshmallow garnish, this is the perfect seasonal treat for chilly mornings or relaxing afternoons.

Sweet Potato Purée:

2 medium sweet potatoes, peeled and cut into small cubes
1 stick unsalted butter
1/4 cup maple syrup
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/4 cup heavy cream
1/2 cup oat milk (add more if needed for blending)

For the Latte:

2 oz of Cape Coast 'El Jeffe' coffee
1.5 oz sweet potato purée (from above)
4 oz cup oat milk, frothed if possible
Mini marshmallows, for topping
Ground cinnamon, for garnish

Instructions

Prepare the Sweet Potato Purée:

Preheat the oven to 425°F (220°C).
Melt unsalted butter in saucepan, stirring frequently, until browned.
Arrange the sweet potato cubes on a baking sheet and sprinkle the browned butter on top.
Roast for 25-30 minutes or until the sweet potatoes are soft and caramelized.
Let the sweet potatoes cool slightly, then blend with the maple syrup, nutmeg, cinnamon, heavy cream, and oat milk until smooth. If the mixture is too thick to blend smoothly, add a bit more oat milk, a tablespoon at a time. Set aside.

Make the Latte:

Pour in your ‘El Jeffe’ coffee into a large mug.
Add 3-4 tablespoons of the sweet potato purée and stir until well blended and smooth.
Froth the oat milk, then slowly pour it over the coffee mixture, stirring gently to combine.

Serve:

Top with mini marshmallows and a sprinkle of ground cinnamon for garnish.Enjoy the cozy, autumn-inspired flavors of your Sweet Potato Latte!

- For a creamier latte, add a splash more oat milk while blending the purée.
